Weekend Recipe!

Have to share this AMAZING recipe that I got from my friend Misty. She's made it several times and I've been lucky enough to be invited to dinner two to three of those times! I finally pestered her enough to give up the recipe---so you're in luck because I'm sharing it!! I plan on making it sometime this weekend! =) Yum! Enjoy and if you try it, do let me know what you think!

Chicken Bistro Twist
What You Need:
1 pkg boneless, skinless chicken breast
1 container parmesan cheese (1/4 cup plus 2 tbsp. or more as desired)
1 pkg (~2 cups) shredded mozzarella cheese
1-2 garlic cloves, your preference (pressed) 
Italian seasoning – to taste
1 egg white, beaten
1 red pepper diced in small pieces
1 yellow or orange pepper small pieces
½ cup Mayo 
2 packages pizza crust or French loaf 
Olive oil
What You Do:
Preheat oven to 350.
Coat chicken in Italian seasoning and bake in olive oil at 350 for 25-30 minutes, until done.
In large bowl, mix parmesan cheese (minus 2 tbsp), 1 1/2 cups Mozzarella cheese, diced peppers, 2 tablespoons Italian seasoning, garlic pressed, mayonnaise.   Chop chicken into small pieces and add to mixture.
Roll out dough on cookie sheet, side by side, and scoop chicken mixture into center of each piece of dough. Press ends together and turn over, crossing over each other, like a braid. 
In separate bowl, beat egg until blended and brush over dough. 
Sprinkle Italian seasoning and remaining parmesan cheese over the top. 
Bake at 350 until golden brown (and dough is done).

Thursday Thirteen #1

Okay, snagged this from Ames . Go check out her list of 13 Singers She'd Like To Shag! LMAO!

So MY Thirteen for this Thursday are 13 Goals that I would like to work on, to focus on ME and improving myself and my life!

1) Family - especially spending more time with brother & future sis-in-law and my 88 year old grandma)

2) Friends - new and old, I would like to make new friends and also work on my relationship's with some of my existing friends.

3) Pets - Work with Ellie May on Agility...the cats are pretty self-sufficient but they like it when I'm home!

4) Improve/organize/maintain house and yard - Which means I will probably have to learn to mow the lawn! Eeek! But hopefully, with Mel's help, I can get at least the organizing done! =) LOL

5. Eat healthier = Lose weight. 'Nuff said!

6. Work out = Lose weight. 'Nuff said! LOL Suppose I should use that $700 Elliptical trainer I purchased that just collects dust, and clothes!

7. Discover new hobbies/interests

8. Focus on Writing - My writing has sadly suffered in the past few years. I just don't make time for it like I used to/should.

9. Church - Perhaps, shall we say...ATTEND?! LOL

10. Give back - To my family. To my friends. To my job. To my community.

11. Be more environmentally 'aware'. Check out some of Mel's suggestions for Going Green

12. Career - I need to focus on improving my 'focus' at work. *Sigh*...which probably means cutting back on my MySpace time! LMAO!

13. Okay, so no laughing, but it would be nice to "cure" my Chronic Tardiness! LOL =)

Trivia Tuesday

10 Things - 10 RANDOM facts/habits about me...

1~ I would "get ready" even to just go out and mow the lawn (assuming that I knew how to mow the lawn, of course!)...then come back in and get ready all over again! LOL

2~ I am afraid that I will never find "the right guy"...

3~ I am seriously OCD about washing my hands---I do it ALL the time!

4~ I have developed an oral fixation again with smoking---when I have HATED it for the past several years. Sure, I will quit again someday...but I am not ready to yet.

5~ I LOVE 2AM work night karaoke jams in my living room with a glass of cheap wine!

6~ I can't swim. Hate the water and can't relax enough to learn, even though I was in lessons for years. I also can't whistle. Don't ask me why, I just CAN'T do it...

7~ I love to dance on stage or on the bar when I've been drinking...although I'm not so great of a dancer!

8~ I have loved with everything I have to give, a couple times, been devestated, and yet refuse to be broken---I will survive and be stronger because of it. I do not want to become cynical when it comes to relationships; I believe in fate and that everything happens for a reason and that someday I will find my happily ever after...

9~ I LOVE jeans and can never have too many pairs. I am constantly on the quest for my next "favorite" pair...

10~ I am obsessed with the movie Sweet Home Alabama and can seriously watch it back to back, all day long if I'm in the right mood...

Inspired to...cook?!

Okay, so it's been FOREVER (aka. last July, basically, after kicking the ex out) since I've cooked anything close to resembling a decent meal---bar Easy Mac at 3AM as a hangover-preventative or the occasional pot of coffee if I can't make it to the nearest Starbuck's. So when I stumbled across this recipe quite accidentially this weekend, I decided that I might have to try it! Sounds good. Looks simple. What's not to like?! =)

Easy Chicken Pot Pie


Prep: 5 minutes Cook: 30 minutes Serves: 4

1 can - (10 ¾ oz) Campbell’s Cream of Potato Soup

¾ cup - milk

1/8 Tsp. - ground black pepper

1 cup - frozen mixed veggies - thawed

2 cans - (4.5 oz each) Swanson Premium Chunk Chicken Breast – drained

1- egg

1cup – All purpose baking mix

Preheat oven to 400 degrees F.

Mix soup, ¼ cup milk, pepper, veggies and chicken in 9” pie plate

Mix remaining milk, egg and baking mix in separate bowl

Pour over chicken mixture.

Bake 30 minutes or until hot and topping is golden brown

Howdy Ya'll!

Welcome to my new home in Blog-land! I'm rather new to this, so please bear with me as I ramble and babble, type and tweak until I get the hang of this! I decided to start this blog with the help of a good friend, who also happens to be a Blog Whore--with the purpose of having a place to write thoughts and ideas and just to post random stuff...much like conversations that you might expect to have in the local coffee shop, sipping mochas, with your best girlfriends.
